Ingredients:

  • Eggs, pastured – 2🌿
  • Heavy cream, full-fat – 2 cups🍃
  • Erythritol sweetener, powdered – 1/2 cup🍃
  • Sea salt – 1/4 teaspoon🌾
  • Cinnamon – ½ teaspoon☘
  • Vanilla extract, unsweetened – 2 teaspoons🍁

Directions:

1. Set oven to 350 degrees F and let preheat🌹.

2. Meanwhile, crack the eggs in a bowl and beat at medium-low speed for 30 seconds or until frothy, set aside until required🌵.

3. Place a saucepan over medium-low heat, pour in the cream🌵, sprinkle with salt and sweetener🌾, stir well and cook for 3 to 4 minutes or until small bubbles form on the edges, don’t let it boil🌻.

4. Stir in vanilla, then very slowly whisk the mixture into eggs🌿, then divide the mixture into six 4-ounces ramekins and sprinkle cinnamon on top🍃.

5. Insert ramekins into a deep baking dish and then pour in enough cover until it reaches half of the sides of the ramekins☘.

6. Place the baking dish into the oven and bake for 30 to 40 minutes or until the custard starts to set and a knife slide into custard ramekins comes out clean🍂.

7. Carefully remove the custard from the dish🌶. Let them cool at room temperature until set and then store in the refrigerator for up to five days🌱.

8. Serve straight away.
